11/15/14 Katie's Healthy Eating Journal: Monday

Still no change with my Mom - she continues to have horribly bad nights and pressure that builds all day.  Thankfully my parents have called the Cleveland Clinic and are getting her into the next available appointment.  I will keep you updated on her progress.  I try to bring FJ over as much as possible to help cheer her up.  She cannot hold him because she is in too much pain, which does make her sad, but at least seeing him boosts her endorphin levels.  

I am in the fourth week of having a newborn baby and everyday gets easier and easier.  He started out only sleeping every 2 hours and then needed to be fed.  Last night he went 6 hours the first feeding and 4 hours the next stretch.  Wow, who knew how treasured sleep could be!  I have yet to get out of the house by myself and tomorrow my aunt is coming over to relieve me and let me have a little "me" time.  I think this is very important for any parent.  You need some adult time that is for yourself; not devoted to caregiving.  I have a feeling this first time being alone from him maybe pretty difficult!  But, I have to take the leap and just do it!  


Breakfast - 

100 cal English Muffin, 1/4 cup Break-free eggs, 1 strip turkey bacon


1 cup fat-free organic milk

Lunch - 


Fat-free yogurt

Sugar-free jello

Lean Pockets Broccoli and Cheddar

Snack - 

3/4 cup strawberries

Dinner - 

Soy crumbled stuffed pepper

1/2 cup soy crumbles, 1/2 cup mushrooms, 1/4 cup green peppers, 1/4 cup tomato sauce, 2 tbsp. fat-free cheese, 1/4 cup onions, 1/4 tsp. garlic minced, 1/2 tsp. taco mix, and 1 red pepper.  Bake at 375 for 25 minutes red pepper, cut in half.  Split filling between both halves at 325 for 20 minutes.  Both halves (all ingredients) equal 1 serving.

Broccoli with 1 tbsp. margarine

Snack - 

100 cal pack
